Hawaiian Kanpachi Sashimi

Hawaiian Kanpachi is farmed in the deep waters off the Kona coast, and has a beautiful fattiness.

It is paired with shiso tsukudani.  Shiso was brought to Hawaiʻi in the late 1800s.  It originated in China where it was primarily used in medicine.  It continues to be of high medicinal value in numerous countries, while many countries have also incorporated it into local cuisine.

The shiso tsukudani is made with mejiso, or shiso buds.
