Naʻau "PB&J"

One of our most popular pūpū is a twist on the beloved childhood favorite, PB&J.  The chicken liver pâté utilizes livers from local, free-range Punachicks Farms chickens, which are combined with burnt miso.  This pâté is then cooked like a custard and paired with ʻākala  berries.

The chicken was a canoe animal, brought to Hawaiʻi.  More specifically, it was the Red Jungle Fowl brought to the island by the Polynesian settlers, which eventually cross-bred with domesticated chickens.  

Punachicks Farms raises Cornish Cross chicks.

The ʻākala is a native berry closely related to raspberries.  The window for harvesting this native delicacy is very short, thus making this a rare treat to experience.  We forage the berries on Mauna Kea; the rich volcanic soil gives these berries an extra "punch" of tannins.  

ʻĀkala, which means pink in Hawaiian, refers to the berry's juice, which was historically used to create dye for kapa.
