Local Lamb 

I grew up hunting wild sheep, and most Big Island wild sheep do not have the gaminess one would expect. Regulations prevent us from being able to serve wild sheep, but a great alternative is the farmed lamb that are raised right here on the island.  Excellent pasture grasses and humane animal husbandry practices result in some of the best tasting lamb in the world.  


Big Island Lamb is highlighted in this dish, along with Mauna Kea plums, which have been cured like oives.


House ‘ulu gnocchi completes the dish.
