Local Grass-Fed Beef Duo

Despite an increase in demand for local, grass-fed beef, Hawai`i's limited resources and lack of sufficient infrastructure result in a majority of our Hawai`i-born calves being sent to the mainland, while Hawai`i consumers purchase a majority of the beef from the mainland.

We strive to support our local ranchers and showcase just how delicious local grass-fed beef can be.

This course showcases two different cuts of beef. Short ribs are braised then char-grilled Pūlehu-style (pūlehu means to broil over hot embers).

The Beef Tartare incorporates Asian ingredients to highlight the beef's flavors. Acid from the popolo capers and limes offer a bright note, while the local chicken egg yolk brings a richness and silkiness to the dish.


This simple preparation is a wonderful introduction for our guests to try Hawaii's grass-fed beef, as no heavy sauces or marinades are used to mask its flavor.
