"Huli-Huli" Chicken

This dish is inspired by the local favorite "Huli-Huli" Chicken, which was created in 1955 by the head of a poultry company.  Huli means "to turn," which is what was done to the chicken as it was cooked between grills.

 Chicken was a canoe animal, brought to Hawaiʻi.  More specifically, it was the Red Jungle Fowl brought to the island by the Polynesian settlers, which eventually cross-bred with domesticated chickens.  

Chicken from Punachicks Farms is roasted, with a stock made from the hard smoked bones.  It is accompanied by a croquette made with chicken breast and pipi kaula.
