Lāwalu

Local fish is cooked based on the the traditional method of lāwalu, in which fish was wrapped in ti leaves and broiled over an open fire.   

Topping the fish is a dried seafood butter made with dried Asian seafood ingredients, such as cuttlefish, scallops, and ebi.
