Local Lamb Phở

I grew up hunting wild sheep, and most Big Island wild sheep do not have the gaminess one would expect. Regulations prevent us from being able to serve wild sheep, but a great alternative is the farmed lamb that are raised right here on the island.  Excellent pasture grasses and humane animal husbandry practices result in some of the best tasting lamb in the world.  


Big Island Lamb is highlighted in this dish using Southeast Asian flavor profiles as inspiration.  


Lamb bones were used to make a broth reminiscent of phở.  Asian herbs and pickled jalapenos accompany the dish.
