Menpachi Bouillabaisse

The menpachi (aka Soldierfish, or ʻū ʻū in Hawaiian) is a relatively small, nocturnal predatory schooling fish has a fine grain and a mild, delicate flavor.  

The flavors of this course remain classic, but Chef Brian wanted to integrate the use of local ingredients, such as  the menpachi, which was a favorite fish amongst the Japanese in Hawaiʻi, and was often the most expensive fish at the local fish markets.
