Menpachi Sakamushi
The Japanese, who first arrived in the islands in 1868, have had a profound influence on Hawai‘i's culinary scene.
Sakamushi is a type of cooking technique using sake to steam / poach food. For this course, menpachi is poached with sake, shoyu, sugar, and ginger.
The menpachi (aka Soldierfish, or `ū `ū in Hawaiian) is a relatively small, nocturnal predatory schooling fish has a fine grain and a mild, delicate flavor.
