Peppered Fish Mapo Tofu

The Chinese dish, Mapo Doufu (Mapo Tofu), is a favorite in Hawai‘i.  Mapo Doufu, which translates to “pockmarked old woman’s tofu,” is said to have been a creation of Mrs. Chen in the 19th century in the Sichuan Province in China. 


Commonly made with pork, Chef's version is made with fish. 


Fish trimmings are ground up to replace the pork in the mapo tofu sauce, and fish loin is pepper-crusted and seared. 


The sauce contains gochujang and charred eggplants, and accompanying the dish is garlic fried rice.
