Poached Hawaiian Kanpachi

Hawaiian Kanpachi (aka kāhala) is farmed in the deep waters off the Kona coast.  It can be served both raw or cooked, and in this cooked version, it is paired with a warm salad of pipinola, tomatoes, onions, long beans, wing beans, and a vinaigrette.

An Umami, garlic-chili crisp completes the dish.
