Rose Veal

Rose Veal is sourced from Mahiki Ranch in Waimea.  

Calves remain with their mothers in pasture, with access to nutritious grass and milk from their mothers.  Such humane animal husbandry practices result in healthier calves with meat that is a darker shade of red than you would typically find with other calves. 

I chose to showcase this ingredient in Lūau Stew.  Rose Veal shanks are hot-smoked then braised.  The braising liquid is then turned into a lūau stew, with fresh kalo as the starch.
