ʻĀkala Cheesecake

The ʻākala is a native berry closely related to raspberries.  The window for harvesting this native delicacy is very short, thus making this a rare treat to experience.  We forage the berries on Mauna Kea; the rich volcanic soil gives these berries an extra "punch" of tannins.  

ʻĀkala, which means pink in Hawaiian, refers to the berry's juice, which was historically used to create dye for kapa.

The ʻĀkala was turned into a gel, and tops our signature cheesecake.
