Ehu

Ehu, or ruby / red snapper (`ula`ula in Hawaiian), is one of the Deep 7 Bottomfish of the Hawaiian islands.

For this course, Ehu is olive oil-poached. A sauce made with the dark ehu stock is emulsified with limu (seaweed) butter. Grilled sweet Ewa corn is added to the sauce.

The limu used is lepe-o-hina, a native limu that is sustainably farmed at Ocean Era on the Island of Hawai`i.
