Kūpe‘e Chowder

Many in Hawai‘i grew up picking and eating kūpe‘e.  This nocturnal sea snail has a flavor and texture that is akin to clams, which makes it ideal for a chowder.  

The chowder is made with housemade bacon made from local pork.
