Kālua Pork

This dish is an interpretation of the classic "Kālua Pork and Cabbage" that is a common dish at local gatherings.

The earliest Polynesian settlers introduced the pig to the islands, which played an important role in ancient Hawai‘i.  Pigs were often sacrificed to gods, and it was also kapu for women to eat pigs until 1819.

Local pork belly is served with local cabbage, mushrooms, and kai choi.
