PBS Pasta
A majority of the Portuguese immigrants arrived in Hawaiʻi from 1878. This course takes a popular Portuguese dish, Portuguese Bean Soup, aka Molho de Feijão or Sopa de Feijão, and incorporates the significant elements into a pasta dish.
In addition to beans, which are a staple in Portugal, local Portuguese Bean Soup includes Portuguese Sausage, which is adapted from the Portuguese linguiça.
Housemade local sausage is used in a soffrito to make a ragù for the pasta.
