Samoan Crab Saimin
Samoan Crab was introduced to Hawai‘i in 1926. This highly prized, yet invasive crab competes with native species for food, eats native invertebrates, including smaller crabs, and disrupts the ecosystems of Hawai‘i's fishponds.
The Samoan crab for our Invasive Species menu series was caught by Paepae o He‘eia - the organization that cares for and has been restoring the He‘eia fishpond on O‘ahu.
Samoan crab is incorporated into a local favorite comfort food - saimin.
