‘Ulu Crusted Fish

This dish is a twist on "fish and chips," utilizing local ingredients.  

‘Ulu (breadfruit) is one of the staple crops brought to Hawai‘i via canoe by the earliest Polynesian settlers.  For this dish, Hawai‘i ‘Ulu Cooperative created "breadfruit crumbs" akin to breadcrumbs, which we use as a crust for fresh local fish.  

Triple-cooked ulu acts as the "chips," and a remoulade made with Mauna Kea plums (versus the typical capers) that were fermented like olives accompanies the fish.
