Venison Tartare

Being a hunter for more than 30 years, I have a strong connection to Axis deer.

Although an invasive species in Hawaiʻi, Axis deer is also considered by many to be one of the best-tasting game meats in the world. 

Axis deer are a threat to native plants, damage crops, and even cause erosion.

Unfortunately, limited access, federal and state directives, and hunting regulations create challenges for some who wish to harvest this great food source.  

Maui Nui Venison is one company in Hawaiʻi that sources deer and processes them in a USDA facility, allowing access to this nutritious and delicious ingredient.     

For this course, vension is made into a tartare and served with capered Mauna Kea plums.
