Tahitian Prawn Toast

Chef Brian spent many weekends as a kid playing in the rivers and streams, catching Tahitian prawns and mosquito fish - both of which are considered invasive species.  

Tahitian prawns were introduced to Molokaʻi in 1956 as a food source.  Their lifecycle, in which their larvae migrates out to sea before returning to freshwater, resulted in them establishing themselves on other islands.  

Tahitian prawns not only compete for food eaten by native invertebrates, but they also prey on the native invertebrates.  


This dish was inspired by the Vietnamese Shrimp Toast.  Tahitian prawn mousse is served atop of toast, and is served with a Thai curry sauce.
