Ōpakapaka

Ōpakapaka, or pink snapper, is Chef Brian's favorite of the Deep 7 Bottomfish in Hawai‘i.  It is one that is especially prized by locals at the onset of the new year, as pink- and red-hued fish symbolize good luck for the Japanese and Chinese. 

For this dish, Ōpakapaka is baked in ti leaf and served with a warm ogo vinaigrette.
